Recipe For Vegan Cold Avocado Soup
Preparation time: 10 minutes
Ingredients for 2 people
500 gr. ripe avocados
200 gr. yogurt (vegan, greek style)
5 tbsp. lime juice
14 mint leaves
200-230 ml of water
1 ice cube
2 radishes, in small cubes
6 cherry tomatoes, in small cubes
1/2 green pepper, in small cubes
Peel the avocados and put them in a blender with the yogurt, lime juice, and ice cube. Melt them well, add the mint, and mash until the mixture is smooth.
Slowly add the water, until it reaches the density you like. Be careful not to get too fluid!
Add salt and cayenne pepper, and mix well
Store in the refrigerator until served.
Serve in a bowl and garnish with the diced vegetables and mint leaves.
