Vegan Ice Cream Recipes
Coconut ice cream
Materials
2 cans of coconut milk
3/4 cup of sugar
1 pinch of salt
2½ tbsp cornflour
Whitened and roasted almonds for serving
Procedure
Set aside ¼ cup of coconut milk and pour the rest into a saucepan. Add the sugar with the salt and stir until the mixture boils and the sugar dissolves.
In a bowl, mix the remaining milk with the cornflour to homogenize and add them to the pot. Stir over medium heat until the mixture thickens. Remove from heat.
Transfer the mixture to a metal bowl, let it cool well, and then cover and put it in the freezer for at least 4 hours to thicken well. Alternatively, transfer the mixture to an ice cream maker.
Serve in a bowl with roasted almonds.
Cherry ice cream – banana
Materials
2 frozen bananas
1½ cup pitted cherries, frozen
30ml coconut or almond milk
Dark chocolate drops for serving (optional)
Procedure
Remove the stone from the cherries, place them in a pan, and put them in the freezer, taking care not to stick together. Peel the bananas cut them into slices and freeze them.
Put the bananas, 1 cup of the cherries, and the coconut or almond milk in the blender and beat well to homogenize. If necessary, add a little more milk. Finely chop the remaining cherries and add them to the mixture.
You can serve the ice cream immediately in a bowl, sprinkling it on top with chocolate drops, or transfer it to a bowl and put it in the freezer for later.
