Easy roasted garlic yogurt dip

If you don’t like the sharp taste of raw garlic, this roasted garlic yogurt dip is sure to go down a treat.

Ingredients:
• 1 head of garlic
• 2 cups of yogurt
• 2 tbsp of extra virgin olive oil
• 1 jalapeno, finely chopped
• Salt and pepper to taste
• 2 tbsp coriander, finely chopped

Method:
• Preheat the oven to 200°C. Peel the outermost layer of skin from the head of garlic and chop off the ends. With the rest of the skin on, wrap the clove of garlic in a piece of foil after drizzling it generously with olive oil, salt, and pepper.
• Roast the garlic for 45 minutes to an hour until it has cooked completely and is soft.
• Let it cool completely and then squeeze out the roasted garlic pulp from the skins and set it aside.
• Hang the yogurt in a muslin cloth or cheesecloth over a bowl for 2-3 hours until most of the water has dripped away.
• Combine the yogurt with the roasted garlic pureé and the rest of the ingredients. Mix well and serve!

Cucumber, dill and yogurt dip

This Greek-style dip is super refreshing and has a distinct, unique flavor.

Ingredients:
• 2 cups yogurt
• 1 cucumber
• ½ cup sour cream
• A pinch of crushed pepper
• 1 tsp lemon juice
• 2-3 tbsp dill, finely chopped
• 1 small clove of garlic, minced
• Salt to taste

Method:
• Line a bowl with a muslin or cheesecloth and pour the yogurt into it. Gather the corners of the cloth and tie it so that the yogurt rests neatly in the center of the parcel.
• Hang this parcel over a bowl and allow the water to slowly drip away for 2-3 hours.
• Refrigerate the hung yogurt for an hour. This makes the yogurt dip extra refreshing.
• Next, peel, deseed and dice the cucumber into extremely small cubes. If you don’t want to chop it, you can use a coarse grater to grate it into shards. If you opt for the second method, don’t forget to squeeze out some of the water from the cucumber.
• Once the yogurt is chilled and the cucumber is chopped, simply combine all the ingredients and your dip is ready.
